Perfect poached eggs in just 1 minute

One minute in the microwave is enough to make perfectly poached eggs, with oozy gooey yolks #yolkporn.

That could pretty much be this entire blog post.

I have been messing about with quick cooking meals for nearly a year now and this is a revelation. A friend who works in a cafe told me that when they were rushed they used a shortcut to poach eggs. Some internet research tells me this is not a secret, there was a post about this on the kitchn back in 2010 and on bonappetit.com, but it’s new to me.

Every morning this week I have been having poached eggs for breakfast. Poached eggs + Sriracha sauce = ❤️. It’s fabulous and so quick that the slowest element of my breakfast was making a proper cup of tea.   Continue reading “Perfect poached eggs in just 1 minute”

Steamed broccolini and tofu

Broccolini is a great quick cooking vegetable and this recipe is one of my go to meals.  It’s super quick and plenty tasty.

Ingredients

  • 1 bunch broccolini
  • 150 grams firm tofu

  • 1 red chilli
  • 1 tablespoon ketjap manis
  • 1 tablespoon fish sauce
  • 1/2 teaspoon of crushed garlic

Cooking

  1. Wash broccolini bunch and chop into thirds
  2. Slice tofu into 1/2 centimetre thick slices and lay on chopping board, cover with tea-towel and flip over.  Press down to squeeze water out of the tofu
  3. Chop the chilli
  4. Throw all of the ingredients into a microwave dish with a tablespoon of water and microwave for 3 minutes
  5. Serve

Clean up

This recipe gets 5 stars for being easy to clean up after, the only dishes are the microwave container and the chopping board.
