Self-isolation dessert: Stewed apples for one in 5 minutes

Social distancing stress baking is a problem when you live alone: a whole tray of brownies is way too much brownie for one person to eat. 

Here is my super basic recipe for when I needed something to cheer me up through a winter of lockdown. We’ve just made it through to the other side here in Australia and the state I live in has now been COVID free for two weeks, but now many others are heading into the Northern hemisphere winter facing extended periods of self isolation. I hope this cheers you up.

Self-isolation stewed apple for one

Ingredients

1 apple

1 teaspoon sugar

A pinch of cinnamon

Directions

  1. chop apple into small slices
  2. Place apple, sugar and cinnamon in a microwave container, cover a microwave for 2 minutes, then stir and microwave for 1 minute more
  3. Serve with walnut pieces and your favourite dairy or non dairy icecream, or custard.
